We’re pretty thrilled to announce the winner of our first Recipe Contest! Introducing the incredibly bright and adorable Devanshi Bhandari and her winning recipe of Eggless Vanilla Cupcakes with Frosting. Devanshi loves cooking and specially enjoys baking and this recipe of her’s never fails to impress her guests. All this is made even more remarkable by the fact that she is 11 years old! Vanilla Cupcakes with Frosting
2 1/2 cups Flour
2 1/2 tsp Baking Powder
1 tsp Baking Soda
3/4 cup (170 gm) Butter, softened
1 2/3 cup (350 gm) Sugar or powdered sugar
1/2 tsp Vanilla Essence
3/4 cup (180ml) Milk
1 cup (240 ml) Yoghurt
1 cup (225 gm) Butter
3 cups (275 gm) Icing Sugar
1 tsp Vanilla Essence
(Eatelish’s note: We always prefer Vanilla extract over essence if you can find it)
Preheat oven to 180 degrees. Place cupcake liners in cupcake tray. Keep aside.
Sieve together flour, baking powder and baking soda. Keep aside. In a bowl mix milk, yogurt, and essence and whisk well for a minute. Pour this milk mixture into butter sugar mixture and mix well till combined. Add the flour and fold into batter. do not over beat.
Pour up to 2/3 of batter in each cupcake liner. Bake in preheated oven for about 18-20 mins or till done. Remove from the oven and cool for 15-20 mins.
For the frosting: Cream butter till white and fluffy. Add vanilla essence and sugar, one cup at time. Continue beating till well blended and fluffy. Use it for frosting the cooled cupcakes!
