Ginger Mojito

A perfect midweek sundowner is this delicious Ginger Mojito. A little old-fashioned with the crunch of sugar crystals, a little new-fangled with the sharp tang of ginger playing with the mint and lime, this Mojito will ease away your cares and get you past hump-day, ready to face the rest of the week.

This recipe serves 6, so invite a few people over to share it with or if you’ve had a particularly hard day, keep it all to yourself. We won’t tell.

There’s a tiny bit of procedure involved to get the perfect ginger flavour, but if you’re in a hurry to get some Mojito in you and not too fussy about bits of grated ginger in your mouth, you can even skip the simmering portion of the recipe.

Ginger Mojito
Serves 6

Directions

1/2 cup Water
1 inch piece of Ginger, grated
1/2 cup Sugar
1 bunch fresh Mint
4 Limes, juiced
3 cups White Rum
1 liter Soda
Ice

Directions

In a saucepan, bring the 1/2 cup of water and the grated ginger to quick simmer and then strain the water out into a large pitcher and let it cool. Add an ice cube or two to speed things along.

To the pitcher, add the mint and sugar and muddle together. Pour in the rum and lime juice and stir. Top up the pitcher with soda and some ice and you’re good to go.
